It's something about coming home to the south. There are dishes that you can't get anywhere else but in the south. Living back on the west coast has reminded me of that so I tend to over indulge when I get the opportunity to eat some of my staples! Well, my list was a bit longer than usual this year and I was unable to visit all of my faves so I got a little creative in Mama's kitchen one afternoon before family game night. Here we have the best copycat recipe for at-home American Deli Style Shrimp Fried Rice!

Now let's get started with this easy recipe. I cut as many corners as I could. I know we are not always working with a lot of time these days.
Boil 2 bags of Minute Rice according to package instructions and set aside. Pat shrimp dry and on medium/high heat add oil, sauté shrimp until cooked through, season with salt and pepper to taste. Set aside.
Add oil, sauté onion, garlic and ginger paste. Sauté until translucent and well combined. Salt and pepper to taste. Add frozen vegetables and sauté until warm and cooked through. Make space to scramble eggs in the same pot. Add oil and scramble eggs, slowly adding in vegetable mixture until thoroughly combined.
Place egg, veggie and onion mixture in a bowl, set aside. In the same pan on high heat, add 1tsp oil and fry cooked rice adding soy sauce and sesame oil. Sauté until rice becomes sticky and clumpy.
Add egg, veggie mixture and green onion back to pot and stir. Turn off heat, add cooked shrimp and stir until thoroughly combined. Top with remaining green onion. Enjoy!
Shrimp Fried Rice-American Deli Copycat
Ingredients
- 2 Bags Minute Rice
- 4 teaspoon Olive Oil divided
- 1-2 lbs Raw Peel Deveined Shrimp 2 lbs used in pictured recipe
- 1 Onion small-medium
- 1 tablespoon Garlic Paste
- 1 tablespoon Ginger Paste
- 12 oz Frozen Mixed Vegetables
- 4 Eggs
- 1 cup Soy Sauce
- 1 tablespoon Sesame Oil
- 1 cup Green Onion
- Salt & Pepper to taste
Instructions
