BAKED CHICKEN PARM SUB
Looking for an Italian inspired dish perfect for the weeknight? Entertaining guests and need a quick appetizer to prepare? These chicken parm subs are the perfect recipe. Thinly sliced chicken breasts are seasoned and dreaded in an egg, flour and panko-parmesan coating.
Baked (not fried) until crispy and topped with spicy marinara and gooey mozzarella cheese. Fresh basil is added just after the oven to give this a true Italian flavor profile.
All things considered; this chicken parmesan sandwich recipe comes together in just under thirty minutes with proper preparation.
INGREDIENTS NEEDED
The parmesan chicken sandwich only needs attention to coating the chicken. Let us start there, here is what you will need.
PARMESAN CRUSTED CHICKEN
- Boneless skinless chicken breasts. Purchase small or thin if you can locate them. If not, we will discuss a few options further below.
- Seasoning blend; salt, pepper, garlic powder, onion powder, red pepper flakes. Seasoning every layer of this recipe will result in a flavorful sandwich. Use this seasoning blend for the chicken breasts and we will use most of these spices additionally to season the flour.

- Flour. All-purpose works best, prepare to use just under one cup.
- Panko breadcrumbs. This ingredient is important as it is the crust topping for the parmesan chicken sandwich.

- Mozzarella. Fresh works best for this recipe. To summarize, purchase the pre-sliced or log that comes vacuumed pack. You can certainly use pre-shredded, but it may not melt as nice.
- Basil. Fresh basil adds a pleasing aroma to this sandwich. Fresh is certainly best.
- Crusty Bread. To explain, I used Trader Joe's French Rolls. These were the perfect size, filling (two per serving) and easy to manage like mini subs.
- Baking/Cooking spray. This will help the chicken breasts to not stick while cooking in the oven.
ADDITIONAL COOKING METHODS
What is beautiful about this recipe is that the chicken can be prepared using several cooking methods. All were tested and approved. Here are a few options tested from my kitchen,
- Air Fryer. Yes, this recipe is air fryer approved. Simply follow the exact instructions and air fry on 400 degrees for up to 15 minutes being careful to turn the coated chicken breasts at least once.
- Pan Fry. Frying the coated chicken breasts are certainly and most traditional method. Simply add up to two cups of preferred cooking oil and fry until crispy, golden and cooked through.
- Sauté. Skip the parmesan crust coating and use the provided seasoning blend and sauté the chicken breasts until cooked through.
HOW TO MAKE BAKED CHICKEN PARM SUBS
PREP THE INGREDIENTS
First, it is important to note that prepping the recipe ingredients will ensure in a smooth and easy cooking experience. As mentioned, this recipe can be cooked from start to finish in under thirty minutes.
- Measure and slice each chicken breast to fit the size of your sub buns. It is important to realize at this step, pound the chicken thin to about 1" in thickness if needed.
- Now, measure the flour, panko breadcrumbs and seasonings.
- Next, shred the parmesan cheese and slice the mozzarella into thick slices suitable to fit the size of the chicken breasts.
- Then, crack the eggs and stir vigorously seasoning with a little salt and pepper. As has been noted, each layer of this recipe will be seasoned.
- Slice the sub bread in half and if desired, brush a butter, garlic and dried parsley mixture over the top of the buns and the bottom bun. You will need about one tablespoon of butter, one teaspoon each of garlic and dried parsley.
COAT AND BAKE PARMESAN CRUSTED CHICKEN
- Begin by taking the seasoning blend and fully coating the prepped chicken breasts with the spices.
- Next, take the additional seasoning blend, add to the flour mix.
- Add the fresh shredded parmesan to the panko bread and mix.
- Then, take the beaten egg mixture and begin dipping the seasoned chicken breasts into the egg mixture.
- Now, take the chicken breasts and dip each cutlet into the seasoned flour and panko mixture and.
- On a lined baking sheet with cooking/baking spray, place the coated chicken cutlets on to the baking sheet and bake at 400 degrees for 15 minutes flipping halfway through until chicken breasts are crispy and fully cooked through.
PREPARE ADDITIONAL INGREDIENTS
While the parmesan crusted chicken bakes, prepare the additional ingredients. It is almost time to serve so now is a good time to prepare the sub bread if you would like to butter and bake them.
- After slicing the sub sandwiches in half, brush the top of the bread and bottom with the butter mixture mentioned above. Set aside until later use.
- Now, adjust the oven temperature to broil.
- After the parmesan chicken has cooked through, place one to two teaspoons of marinara sauce on top of the chicken breasts. Add red pepper flakes if desired for a bit more spice.
- Then, layer the sliced mozzarella on top and broil for one to two minutes until the cheese is melted bubbly and the chicken breasts become more golden and crispier.
- While the parmesan chicken breasts broil, now is a good time to toast the buns as well. Be careful not to burn, this step will only take one to two minutes.
ASSEMBLE THE SUBS
- Beginning with the bottom bun, add an extra layer of marinara sauce is desired.
- Next, place the crispy parmesan crusted chicken on top of the marinara sauce.
- Then, layer one to two leaves of fresh basil and top with the top bun.
- Serve and enjoy!
TIPS AND TRICKS FOR MAXIMUM RESULTS
- Make sure the chicken breasts are pounded thin to decrease baking time and ensure chicken cooks evenly.
- Create a "dipping" station including the egg mixture, flour and panko/parmesan. To explain, use a large plate to lay out the dipping ingredients and create a working assembly line.
- Add a quick butter herbed sauce to the sub bread.
- This recipe is best served right away. If there are leftovers, simply wrap in a kitchen grade wrap such as aluminum foil or clear wrap. To reheat place in the oven on 250 degrees Fahrenheit and heat for 5-10 minutes.
