WHY THIS BAKED POTATO WITH STEAK RECIPE IS A MUST TRY!
Love steak and potatoes? You will undoubtedly love this stuffed baked potato recipe with juicy grilled steak topped with an easy but satisfying blue cheese sauce. With that said, this recipe is rich, comforting and filling.
If you have about one hour of cooking time, this recipe is complete from prep, start and finish. The baked potatoes (if baked in the oven) are crispy and cooked in about 45 minutes (depending on size). While the potatoes bake, we will season the steaks, sauté peppers and onions and prepare the blue cheese cream sauce.
This recipe is a fan favorite because it bursts with flavor. A recipe that is extremely approachable and beginner friendly and it breaks the monotony of eating "the same old dinners" every week.
WHAT INGREDIENTS DO I NEED?
As mentioned, this is a pantry approved recipe with simple items you will more than likely have on hand. Here is what you will need:
Ingredients for Stuffed Potato
- Russet Potatoes. I used russet potatoes in this recipe and the size was small to medium.
- Butter. Can't have potatoes without butter. Unsalted works best so you can control the sodium amount throughout the entire recipe. We will also use butter to sauté and base the steak. Yum!
- Olive Oil. We will use to dress the potatoes before baking.
- Cheese. This step is optional but for the cheese lovers, we are adding a bit of shredded cheese inside of the potato. Feel free to use mozzarella, parmesan, or any cheese you may have on hand!
- Green Peppers & Onions. This recipe is not complete without deliciously sautéed and seasoned peppers and onion.
- Steak. Use your favorite cut of steak. If following along with this recipe, we used Top Sirloin Angus Beef Steak.
- Salt and Pepper.
- Rosemary. Fresh is the only way to go here. This will provide tasty aromatics while basting the steak with a little butter.

Ingredients for Blue Cheese Sauce
- Bleu Cheese Crumbles. You can find this in the "fancy" cheese section at your local grocery store. We will talk about substitutions below, keep reading.
- Garlic. Garlic paste or freshly minced garlic works best.
- Heavy Cream. This ingredient will be used to prepare the blue cheese sauce.
- Parsley. Curly parsley is my favorite to use for garnishing dishes.
HOW TO MAKE THE ULTIMATE BAKED POTATO WITH STEAK AND RICH BLUE CREAM SAUCE
Preparing the Perfect Baked Potato
Preheat oven to 425 degrees. Then, thoroughly clean potatoes, patting dry with a paper towel.
Line a baking sheet with parchment paper or aluminum foil. Next, using a fork, poke holes all over the potatoes. Then pour oil over potatoes, sprinkling with coarse salt and massage until fully covered.
Bake uncovered (do not wrap in aluminum foil) for 45-60 minutes until cooked through to the center (fork tender).

How to Prepare and Cook the Top Sirloin Steak
First, pat your steak dry with a paper towel. It's important to remember, good steak needs only a few ingredients to reach perfection.
Now, in a cast iron skillet preferably or a sauté pan, turn the heat to medium to high heat. While the pan is coming to temp, liberally season the steak with salt and pepper.
When the pan is hot and ready, add butter and allow the butter to melt and sizzle. When the butter starts to sizzle add the steak and do not move the steak. Allow the steak to cook on one side for at least 2-3 minutes.



Then, flip the steak only once and allow the steak to cook for an additional 3-5 minutes. It is important to note, cooking times will vary based on desired level of doneness.
We will discuss this further below. but while the steak cooks after you have flipped it once, begin basting the steak with a spoon and drizzle the sizzling butter over the steak. You can also add the fresh rosemary at this time.
Cook steak till desired doneness and allow the steak to rest while preparing additional ingredients. Set aside until further use.
Cooking the Top Sirloin Angus Beef Steak To Your Desired Doneness
As mentioned, cooking times will vary based on desired doneness. Here is a brief breakdown.
- Rare. Sear the steak for 2-3 minutes per side over high heat. When it reaches about 120 degrees Fahrenheit, pull it off the heat and let it rest at least five minutes. The steak will be deep red with a cool inside to the center.
- Medium-Rare. Sear the steak for 3-4 minutes per side over high heat. When the internal temperature reaches about 130 degrees Fahrenheit, pull the steak off the heat and allow it to rest.
- Medium. Sear the steak for 4-5 minutes per side over high heat. The steak is ready to pull off the heat when the internal temperature reaches about 135-145 degrees Fahrenheit.
- Medium-Well. The steak will need to sear for 5-6 minutes per side over medium to low heat. Internal temperature will need to reach about 150 degrees before pulling it off the heat and allowing time to rest.
- Well & Well done. Oh boy, love you all but I hope we aren't cooking steaks to this temperature. If so, I'm sharing some substitutions below for other proteins that may be a better fit texture wise. 🙂
Sautéing Peppers and Onions for Extra Flavor
While the steak rests, this is a great time to sauté the peppers and onions. With that said, we are also using the leftover fat from the steak to cook the vegetables, yum!
Depending on the cut of steak you cook will determine the amount of leftover fat that will be in your pan. We will only need about one tablespoon of reserved steak drippings. In that same pan over medium heat, add the sliced peppers and onions to the pan and sauté until soft and translucent.

If the vegetables begin to stick to the pan, simply add about one tablespoon of water to the pan to break up the sticky bits. After the vegetables are cooked through, set aside until assembly time.
How to Make the Creamy Blue Cheese Sauce
This sauce is super simple to prepare, you will need an additional sauté pan. On medium heat (being careful not to burn the blue cheese), add the garlic to the pan and begin whisking.
Next, add the blue cheese crumbles and whisk for about 60 seconds again, being careful not to burn the cheese. Slowly pour in the heavy cream and stir until the ingredients are combined and begin to bubble.


Once the cream sauce bubbles, that is an indication that the sauce is cooked through. It should be creamy in texture and slightly thick.
HOW TO ASSEMBLE BAKED POTATO STEAK
At this time, the baked potatoes should be cooked through, they will be hot so be prepared to use a kitchen towel to handle. On the baking sheet, begin by slicing the baked potatoes open. Using a fork, fluff the inside of the potato, removing the insides from the skin.
Now, add additional butter and cheese and stir until creamy and smooth. At this time, you can season with a little salt and pepper if desired. Next, divide the sautéed peppers and onions and add on top of the potatoes.



At this time, the steak would have rested so it is now time to carefully slice the steak (against the grain) into small bite sized pieces. After that, evenly distribute the steaks over the potatoes with peppers and onions.
Then, using a spoon, ladle the creamy blue cheese sauce over the steak and garnish with freshly chopped parsley and enjoy!

HELPFUL TIPS FOR ELEVATING YOUR BAKED POTATO WITH STEAK
- Use quality steak. Depending on your budget, use quality steak for best results. As mentioned, this recipe used top round Angus beef steak. Sirloin, ribeye, or even filet mignon will work great. Be sure to adjust cooking time based on size and cut.
- Use a different cheese for sauce. Not a fan of blue cheese? Gorgonzola was the second runner up for this recipe. You can also substitute for cheddar or even goat cheese.
- Don't overcook the steak. It is important to follow the directions above to make sure your steak does not overcook. Having chewy steak with this recipe will not be as enjoyable.
- Prep ingredients. For best results, be sure to prep all ingredients first. In this case, the recipe will be ready in under one hour if using small to medium sized potatoes.
- Use a meat thermometer. If you are new to preparing steak at home, be sure to use a meat thermometer for best results.
- Let the steak rest. It is extremely advantageous to allow time for the steaks to rest. This step is just as important as cooking. This makes sure the steak is tender and juicy. Allow the steaks to rest at least 5-10 minutes.
- Room temperature steak. One tip I learned in culinary class was to always cook steaks at room temperature. Be sure to allow time for the steak to cool off, no cold steaks in the pan please!

- What is a budget budget friendly options to substitute for steak? Happy to help! I would suggest purchasing the shaved ribeye meat you can find in the meat section at your grocery store. This item is typically used to prepare at-home Philly cheesesteak sandwiches. Be sure to adjust cooking time as this meat will cook much faster, but great option to save a coin!
- Can I prepare the potatoes ahead of time? Absolutely! If you're able to bake the potatoes ahead of time, sure. Be sure to reheat so they are piping hot when ready to serve. Preparing the potatoes in the air-fryer is also another option if you're pinched for time.
- Blue cheese alternatives? Try these and let me know what you think. Gorgonzola (top pick, tested this recipe with this cheese and it was tasty), feta, goat, cream cheese or cheddar.
- My cheese sauce is too thick? Easy fix. Simply add one tablespoon of water at a time and whisk until desired texture.
- How to store leftovers. It is helpful if you can prepare what you need in real time and if you are making a surplus and anticipating leftovers, be sure to keep each layer of this recipe separate. With that said, store the baked potatoes separately and the veggies, steak and blue cheese.
- Why does the recipe call to salt the outside of the potatoes? This method is popular amongst chefs because rubbing salt all over the potato skin draws moisture out of the potato, resulting in crispy skin and a fluffy, tender inside.
- Do you have to pierce the potatoes before baking? Piercing potatoes before baking them allows any steam or excess moisture to escape.
- Do I have to cover the potatoes before baking? No. We want crispy baked potatoes but if they are covered, they will steam, soften, and become soggy.
