BURRATA PASTA WITH BACON
Looking for a unique recipe to break the monotony each week? You have to add this burrata pasta with bacon to your line up. It is creamy, savory, kid friendly and filling.
Although the ingredients are rather basic (or traditional), the combination of flavors and texture really produces a satisfying dish. Pair this pasta with a fresh green salad and I promise you will anticipate your next time preparing this recipe!
Ready in under thirty minutes, this recipe comes together with just a few household ingredients. The base of this recipe is certainly the crumbled bacon, and the base of the sauce begins with the rendered bacon fat, coupled with shallots, garlic, cherry tomatoes, white wine and fresh parmesan cheese.

WHAT IS BURRATA CHEESE?
If you have never tried burrata cheese, a recipe like this is the perfect chance to try it! With that said, burrata cheese is a mix between ricotta and cottage cheese. It is creamy, soft, mild in flavor and slight buttery.
The flavor of burrata is similar to a mild mozzarella. It works best when paired with ingredients like bacon, pancetta, fresh sliced tomatoes, prosciutto, pizza and more! Again, because of the mild flavor, it truly is a great accompaniment to most dishes. I even enjoy burrata paired with fresh sliced peaches on toast drizzled with a balsamic glaze!
WHERE DO I FIND BURRATA CHEESE?
Surprisingly, burrata cheese can be easily found in most grocery stores. Simply locate the specialty cheese section (normally in the refrigerated section) as it is close the cheese packaged in tubs such as pre-shredded parmesan, asiago and goat cheese.
Burrata cheese is packaged in a sealed plastic tub and in a liquid that looks similar to water. Not to worry, this just helps to maintain the freshness of the cheese. When preparing the cheese, simply discard the water and allow the burrata cheese "balls" to drain on a cloth or paper towel.
INGREDIENTS NEEDED
As mentioned, the ingredients in this recipe are household and easy-to-find. Here is what you will need!

- Bacon. I used turkey bacon in this recipe, but pork bacon will work even better as it renders more fat!
- Shallot
- Garlic
- Cherry Tomatoes
- White Wine (chicken broth will work if you want to omit the wine)
- Parmesan Cheese
- Reserved Pasta Water. The pasta water is what will create the sauce for the pasta.
- Spaghetti Pasta
- Burrata Cheese
- Parsley
- Salt + Pepper
HOW TO MAKE CREAMY TURKEY BACON PASTA
In a large pot filled with water, add a generous amount of salt and bring to a boil for the pasta, cover until boiling. While the pasta water comes to a boil, prepare the additional ingredients by roughly chopping the turkey bacon, shallot, garlic, parsley and slicing the cherry tomatoes in half.
COOK THE BACON
Then, in a large skillet, begin browning the turkey bacon. To help the turkey bacon not stick to the pan, add one tablespoon of water at a time to break up the bits on the bottom of the pan.
Next, after about 10 minutes, the turkey bacon should be browned and slightly crisp. Remove from pan and set aside until later use.
Now is a good time to add the spaghetti to the boiling water.



BUILD THE SAUCE
In the same pan with the bacon drippings, saute the shallots and garlic. Continue to stir until ingredients become translucent and soft.
Pour in wine (or chicken broth) and begin deglazing the pan. Then, using a wooden spoon or spatula, begin breaking the pieces up off of the bottom of the pan.
Next, add the cherry tomatoes and allow them to cook down (releasing their juices) for about 2-3 minutes. Add salt and pepper if desired.
Last, add the cooked turkey bacon back to the pan with tomatoes and stir until combined.

COMPLETE BURRATA PASTA
The pasta should be al dente so begin transferring the cooked pasta to the pan with the charred tomatoes and turkey bacon. Be careful to reserve one cup of pasta water for later use.
After adding the cooked pasta, add chopped parsley (reserving a bit for garnish), parmesan cheese and one cup of reserved pasta water. Stir until combined.
Transfer pasta dish to a serving bowl and add burrata cheese on top. Sprinkle fresh cracked black pepper on top of the burrata and garnish with chopped parsley.
This dish is best served immediately, slicing the burrata in half to release the cream to be mixed in with the pasta.

TIPS AND TRICKS
- Bacon works best for this recipe as mentioned, it renders a lot of fat to help build the sauce. You can also substitute for turkey bacon, ham or pancetta!
- Pasta. I used spaghetti in this recipe, but any pasta will work.
- Burrata substitution. If you cannot locate burrata cheese or in need of a good substitute. You can use mozzarella, feta or cream cheese.
- Reserved pasta water. Make sure to not dump the cooked pasta water. As mentioned, this is the main ingredient for the pasta sauce. Simply use tongs to remove the cooked pasta from the pot to reserve cooked pasta water.

HOW TO STORE
Serve immediately! This recipe is best served right after it's done. For leftovers, simply store in an airtight container. To reheat, use a skillet adding ¼ cup of chicken broth and heat until cooked through.
