    If you've ever visited the Atlanta area (specifically Atlanta West End) or heard the hype about Tassili's Vegan Cafe, or Jimmy Jam's Vegan, these spots are known for their mouthwatering kale wraps that keep people lining up daily. Their wraps are packed with bold, fresh ingredients that has made plant based eating no only exciting but extremely flavorful.

    I love treating myself every now and again, it's no secret I love creating copycats or recreations of my favorite foods at home. This recipe is going to be the best at-home version and my tribute to these iconic wraps. for recreating at home. In most major cities there is a big crave around vegan wraps and I can't say that I am upset about it.

    The best part? It’s quick to make and easy to customize, so you can enjoy West End flavor from wherever you are.

    Surprisingly, these wraps are packed with flavor and filled with just simple ingredients. The key is using high quality, fresh ingredients- and maybe that's not so surprising right?

    WHY YOU WILL LOVE THIS LOADED VEGGIE WRAP

    INGREDIENTS

    1. Olive Oil (good quality)
    2. Lemon Juice
    3. Salt & Pepper
    4. Dried Herb Mixture
    5. Sun-Dried Tomatoes
    6. Red Onion
    7. Garlic Paste (or minced garlic)
    8. Plant Based Mayo
    9. Roma Plum Tomatoes
    10. Avocado
    11. Spinach or Chili Tortilla Shell 

    HOW TO MAKE VEGGIE WRAPS

    Massage the Kale

    First, begin by tossing the chopped kale with a little olive oil, lemon juice, salt, and pepper. Massage with your hands until it softens and reduces in volume.

    This step will take 3-5 minutes but will yield perfectly marinated and massaged kale.

    Make the Herby-Mayo Spread

    Next, mix plant-based mayo with garlic paste and your dried herb mixture. Add a squeeze of lemon juice for an extra zing. Whisk or stir until combined and smooth and set aside for later use.

    Assemble the Wrap

    Begin by warming your tortilla slightly for flexibility. Spread the herb mayo, then layer with the marinated kale, sun-dried tomatoes, red onion, fresh Roma tomato, and avocado. Wrap tightly.

    Slice and Serve

    Slice in half and enjoy! Secure with toothpicks if needed or wrap tightly in parchment paper for an on-the-go option.

    TIPS AND TRICKS FOR THE BEST VEGGIE WRAP

    1. Massage the kale. It is imperative that you massage the kale. This is probably the most important step in this recipe. In order to consume and enjoy the recipe, the kale has to be marinated and massage for proper texture and flavor. Don't skip this step!
    2. Quality ingredients. As mentioned, using quality ingredients is what's key to this recipe. Make sure the olive oil, plant based mayo, veggies and seasonings are fresh!
    3. Customize. Pack in more veggies like shredded carrots, hummus, or a protein like chickpeas or tofu.
    4. Pack the wrap tightly. To avoid ingredient fallout, especially if taking it on the go, make sure to wrap the veggie wrap tightly. A great technique I like to use is using parchment paper to wrap then slicing and consuming the wrap within the wrapping.
    5. Warm your tortilla. This prevents cracking in the wrap and makes a world of difference with wrapping the veggie wrap easier.

    1. Can I make this veggie wrap ahead of time?

    Yes! As mentioned, this veggie wrap is perfect for meal prep and/or packing a meal on the go. Just be sure to not add the plant based mayo on the bottom of the tortilla if you are not consuming it right away.

    This veggie wrap is extremely customizable! Simply use a gluten free tortilla/wrap.

    Great question. Curly kale that is on the vine works best for this recipe. Skip the bagged stuff and head straight to the produce section where you can pick a bunch of kale. Be sure to clean, chop and remove it from the stem!
