Next, I was able to create this entire dessert from start-to-finish in under an hour including baking time! Most of the recipes I share will be fuss free like this easy salted apple crisp.
This brown sugar cookie recipe is perfect as it holds firm enough to eat like a real pizza but chewy on the inside as any cookie should be. The whipped cream cheese frosting has just enough sweetness to compliment the natural sweetness in the fruit and the apricot glaze is the icing on this cake leaving notes of fresh orange and mint!

Lastly, this pizza takes me back to my childhood. My cousin who's the real baker in the family would make this for our family gatherings. It was always a hit and we'd always make room for it at the serving table. Create memories with your loved ones through sharing beautiful treats like this!
TIPS TO MAXIMIZE BEST RESULTS
It's important to note to maximize best results, follow these steps below:
- This dough does not have to be chilled. You can bake immediately after it's been prepared.
- Don't omit the corn starch. This helps to keep the cookies soft and tender.
- Eggs, butter and cream cheese should be at room temperature.
- Use your favorite fruits, don't stick to what's listed on the recipe. Toppings are endless!
- Mint in the glaze is optional but highly recommend!
HOW TO MAKE THE BEST FRUIT PIZZA WITH SUGAR COOKIE CRUST
Prepare the sugar cookie crust!
Begin by preheating the oven to 350 degrees fahrenheit. Next, in a large mixing bowl, add butter, white sugar and brown sugar. Cream with hand mixer until thoroughly combined. Next, pour in egg, egg yolk, vanilla and almond extract, lemon juice and mix for an additional 30 seconds or until ingredients are thoroughly combined. Then add in dry ingredients and mix until thoroughly combined. Use a spatula to scrape the sides of the bowl to ensure ingredients are mixed well.

At this point, line a round baking sheet pan with parchment paper and place dough in the center of the pan. Using a spatula or your hands, spread dough evenly onto the baking sheet to fit the circumference of the pan. The dough will become sticky, use 1 teaspoon of flour or 1 teaspoon water to assist.
Lastly, bake for 25-30 minutes until cookie is slightly brown and almost firm to touch. It's important to note, as the cookie crust cools, the dough will harden more. Set aside until further use.
Fruit Toppings
- Slice strawberries into ½ in slices removing the stem.
- Peel kiwi and slice into ½ inch circles.
- Rinse blueberries and set aside to dry.
- Drain mandarins and set aside to dry.
- Rinse raspberries and set aside to dry.
Whipped Cream Cheese Frosting
First, in a large mixing bowl, mix whipped cream and cream cheese using a hand mixer until thoroughly combined and smooth. Lastly, set aside until assembly.
Orange Apricot Mint Glaze
In a medium sized pot on low to medium heat, add glaze ingredients. Stir consistently until well combined and glaze begins to thicken. Set aside until assembly.
Fruit Pizza Assembly
First, add whipped cream cheese frosting to the center of crust adding about ½ cup at a time. Begin spreading the frosting evenly over crust as if you're making a real pizza. Next, add more frosting as needed until entire crust is covered with frosting leaving 1-2 inches of crust without frosting. Then, begin layering your fruit around the pizza alternating toppings based on the pattern you'd like to use until you reach the center of the pizza. (your pizza should be filled with fruit).
Once your glaze has slightly cooled. Take a pastry brush and brush glaze over fruit being careful not to drench fruit with glaze. Serve immediately or refrigerate until ready to be used.

- 1 tbsp Honey
