    Begin your morning with this hearty dish of savory oats with roasted tomatoes! Filled with creamy dairy free oats, a soft egg, avocado and roasted tomatoes in an olive oil sauce. This breakfast bowl will become a healthy staple in your home!

    Breakfast is my favorite meal of the day and getting creative for the most important meal doesn't have to become boring! Get festive and make these quick oats that you'll love equally as much as sweet oats. With just a handful of staple ingredients, you are embarking on a day that will taste good and additionally help you feel good!

    Fall weather is creeping in, warm oatmeal fits perfect to start your day. With this in mind, ditch the traditional style oats and try savory oats. As a true southern girl who loves grits, these savory oats are certainly a healthier option!

    I created this savory dish after wanting a hearty breakfast option that was still healthy and filled with flavor. Oats are incredibly nutritious and are rich in antioxidants and contain a viable source of fiber. After a nice bowl of these Savory Oats with Egg, Avocado and Roasted Tomato, you'll be full for hours in the day!

    HERE'S WHAT TO USE TO MAKE THIS DISH!

    Savory Oats with Roasted Tomatoes, Soft Egg and Avocado
    • Oatmeal (Instant or Old Fashioned)
    • Water
    • Coconut Milk (heavy cream, milk, non dairy cream/milk)
    • Flavored Bouillon (flavored stock)
    • Garlic
    • Season All
    • Cherry Tomatoes
    • Avocado
    • Egg
    • Olive Oil
    • Green Onions

    It's important to realize that your toppings are endless! I have several variations of toppings that I use depending on what I have on hand. With this in mind, you can never get tired of this healthy and tasty dish.

    HOW TO BOIL SOFT EGG

    Soft boiled eggs are one of my favorite breakfast items. As a matter of fact, soft scrambled eggs are in the running as well! Creating a soft boiled egg take a little attention to detail but isn't overly difficult. First, add about two cups of water to a small sauce pot. Place egg in the pot and bring to a boil.

    Whenever the water begins to boil, immediately remove the pot from the heat and let sit for three minutes. Immediately peel egg and set aside until assembly.

    HOW TO MAKE SAVORY OATS

    Preheat your oven to broil.

    First, fill a small sauce pot with two cups of water and flavored bouillon and bring to a boil. Next, pour in oats and begin to whisk or stir and allow oats to cook for up to five minutes. Then pour coconut milk and garlic paste and continue to cook and stir. Last, taste for flavor and add seasonings.

    Savory Oats with Roasted Tomatoes in Pan

    At the same time, place cherry tomatoes on a small baking sheet and drizzle with olive oil, salt and pepper. Roast for one to two minutes until cherry tomatoes become charred and soft.

    By the time the oven is heated and tomatoes are roasted, the oatmeal should be at desired consistency. Plate savory oats first, then add roasted tomatoes, soft egg and avocado. Top with your favorite bagel seasonings and enjoy!

    Ingredients
      

    Savory Oats

    • 1 cup Oatmeal Quick or Old Fashioned Oats
    • 2 cups Water

    • Season All As Needed
    • 1 tablespoon Green Onions

    Roasted Tomatoes
