    Garlicky Veggie Noodle Soup with Spicy Ground Pork

    There are a few staples I keep in rotation and Lotus Foods Noodle Cups are my absolute favorite! I’ve been wanting to create an at-home version of ground spicy pork ramen. With that said, their Garlicky Veggie Rice Ramen Noodle Soup Cup with Freeze Dried Chunky Vegetables was the perfect accompaniment!

    WHAT DOES THE BEST GARLIC NOODLE SOUP WITH SPICY GROUND PORK TASTE LIKE?

    To explain, the noodle soup provides a savory garlic broth with spinach, carrots and mushrooms that pairs perfectly with the spicy, pungent and nutty flavors from the ground pork. With the addition of bok choy and a marinated jammy egg, this bowl is an instant hit!

    Garlic Veggie Noodle Soup with Spicy Pork

    To explain, if you've ever had ramen before, this at-home version holds similar flavors and texture. Spicy ground pork is slightly marinated in a spicy nutty sauce that cooks and thickens as the ground pork cooks. Undoubtedly, the soy marinated jammy egg is delicious. The noodles hold flavor that is deep with garlic and cooked in a flavorful broth. In short, if you have a few moments to spare do not omit the soy marinated jammy egg!

    I DON'T EAT PORK. WHAT SUBSTITUTIONS ARE AVAILABLE?

    While this recipe calls for ground pork, there are several substitutions that should yield the same or similar results! Additionally, here are a few options other than ground pork:

    • Ground Beef, Turkey or Chicken
    • Vegan Ground "Meat" Substitution
    • Soy Chorizo
    • Extra Firm Tofu

    With that said, the cooking times and preparation will vary but these options should work just fine!

    WHAT IS A SOY MARINATED JAMMY EGG?

    First, if you've never had a jammy egg? You are missing out! Jammy eggs are soft boiled eggs, spreadable enough to be traditionally spread on toast. With traditional ramen, soft boiled eggs are included and I didn't want to omit that ingredient.

    To explain further, this recipe for jammy eggs are then marinated in a soy mixture that really adds flavor to the recipe. As a result, these marinated eggs are good alone, amazing with this recipe and the marinade can be used on additional dishes like rice and stir-frys!

    WHAT ARE ALL THE INGREDIENTS NEEDED FOR THIS RECIPE?

    Garlic Noodle Soup

    • Lotus Foods Garlicky Veggie Rice Ramen Noodle Soup Cups (or favorite dried ramen style noodles)
    • Ground Pork
    • Green Onion
    • Cilantro
    • Bok Choy
    • Sesame Seeds

    Spicy Pork Sauce

    • Peanut Butter
    • Soy Sauce
    • Sugar
    • Sesame Oil
    • Ginger Paste
    • Garlic Paste
    • Chili Garlic Sauce

    Soy Marinated Jammy Egg

    • Eggs
    • Water
    • Soy Sauce
    • Sugar
    • Green Onions
    • Red Onion
    • Jalapeno
    • Garlic Paste
    • Sesame Seeds

    HOW TO MAKE THE BEST GARLIC NOODLE SOUP WITH SPICY GROUND PORK

    Prepare the Jammy Eggs

    First, prepare the jammy eggs as they'll need time to marinate. Begin by placing a small pot of water (about two cups) on medium/high heat and bring to a boil.

    As a result, once the water begins to boil, place eggs in a pot and boil for seven minutes. Next, immediately from heat and place eggs in an iced water bath for 10 minutes.

    Lastly, peel eggs and set aside until further use.

    Soy Marinated Jammy Egg

    First, in a large bowl, place marinate ingredients in a bowl. Stir until well combined. Next, place peeled eggs into marinate and marinade covered for 30 minutes up to 24 hours (for best results).

    Spicy Pork Sauce

    Simultaneously, while the eggs marinate, begin preparing the spicy pork sauce. Begin by combining sauce ingredients and stir until well combined. Then, in a medium sized bowl, combine sauce with ground pork stirring until sauce is dissolved into pork. Lastly, Set aside until further use.

    Spicy Ground Pork

    In a wok or large skillet on high heat, add marinated pork and begin sauteing. Next, saute for five minutes and add in about ¼ cup of green onion and stir to combine. In the meantime, continue to cook until pork is cooked through and sauce has browned and thickened. 

    Lastly, set aside until further use.

    Cooking Noodles and Plating

    Begin by preparing the noodle soup cups according to package instructions. At this point, prep garnishes by roughly chopping cilantro and grab remaining green onions. Clean and blanch bok choy for one minute. Slice marinated jammy eggs in half and gather any additional garnishments.  

    In the meantime, pour cooked noodle cups and broth each into a bowl. For each bowl of noodle soup, add up to ½ cup of spicy ground pork, 3-4 slices of blanched bok choy, one tablespoon of green onion and cilantro and one soy marinated jammy egg. 

    Lastly, garnish each bowl with sesame seeds and enjoy!

    Ingredients
      

    • 2 Rice Ramen Noodle Soup Cups (2 packages Instant Ramen w/o seasoning)
    • ½ lb Ground Pork
    • 3 stalks Green Onion
    • ¼ cup Cilantro
    • 3 stems Bok Choy
    • ¼ teaspoon Sesame Seeds

    Spicy Pork Sauce

    • 1 tablespoon Peanut Butter
    • 2 tablespoon Soy Sauce
    • 1 tablespoon Sugar
    • 1 teaspoon Sesame Oil
    • 1 teaspoon Ginger Paste
    • 1 teaspoon Garlic Paste
    • 1 tablespoon Garlic Chili Sauce

    Soy Marinated Jammy Egg

    • 2-4 Eggs
    • ½ cup Water
    • ½ cup Soy Sauce
    • ¼ cup Sugar
    • 2 Green Onions roughly chopped
    • ¼ cup Red Onion roughly chopped
    • ½ small Jalapeno roughly chopped
    • 2 tablespoon Garlic Paste
    • ½ tablespoon Sesame Seeds

    Instructions
     

    Jammy Egg
