Sometimes, that's when the best meals are created, when you're standing in front of the fridge, looking at the leftover (and almost trashy-worthy) items and hoping you can magic happen. The cheese tortellini gives this dish a sweet surprise and I love tomatoes in any pasta dish.
The ground spicy sausage gives the dish a nice surprise flavor too and is a nice replacement to traditional ground beef. Some of my followers have baked this dish but you are perfectly fine to serve as is once all the ingredients are combined with a nice stir, and a hefty topping of fresh Italian parsley. Let's get started with this quick, tasty and most importantly, easy recipe!
In a large stock pot, fill with salted water and follow instructions for tortellini.
While water is boiling, brown sausage on medium/high heat in a large skillet. Add in chopped onion and garlic and sauté thoroughly until cooked. Drain excess fat and return sausage to pan.
Add can of diced tomatoes, stir to combine. Gradually add several handfuls of spinach to meat mixture and allow spinach to wilt. Add more and repeat this process until entire bag is empty. Add heavy cream and stir. While meat and cream mixture simmers (continue to stir), pasta water should be boiling. Add pasta to boiling water and follow instructions on package.
While pasta cooks, add mozzarella cheese to meat and cream mixture, add salt and pepper to taste and stir. Turn off heat. Drain pasta and combine with sauce. Add 1-2 tablespoons of parsley and stir till well combined. Can top with additional cheese if desired and enjoy!
Creamy Sausage Tortellini
Ingredients
- 2 10oz Packaged Spinach Tortellini
- 16 oz Ground Italian Sausage Jimmy Dean Spicy
- 6 oz Spinach
- ½ small White Onion
- 5 cloves Garlic
- 1.5 cups Shredded Mozzarella Cheese
- 16 oz Heavy Whipping Cream
- 1 14.5 oz Can Diced Tomatoes
- 2 TB Chopped Parsley
- Salt and Pepper to Taste
Instructions
- Boil water in large pot for tortellini.
