Trim excess fat from chicken thighs and set aside.
Place soy sauce, sugars, ginger, mirin, gochujang, sesame oil and rice vinegar in a bowl and whisk until well combined.
Sear the chicken thigs on high heat in a wok or medium to large sized skillet.
Pour spicy teriyaki sauce into hot wok, stir occasionally until sauce bubbles and thickens.
Simmer the chicken thighs and sauce until cooked through and sauce is slightly thickened.
Garnish spicy chicken teriyaki with green onion and sesame seeds.
Serve spicy chicken teriyaki with rice and your favorite green veggie.
