Instructions
Jerk Chicken
Pat chicken breasts dry and pound thin to 1-2 inches thick. (if breasts are very thick)
Combine jerk seasonings in a small bowl and whisk until thoroughly combined. Use whisk and fingers to ensure seasonings are well blended.
Coat chicken breasts liberally with jerk seasoning on both sides and pour orange juice over chicken breasts.
Allow chicken breasts to marinate at least 15 minutes before grilling/cooking.
In a grill pan on medium/high heat, add cooking oil and place chicken breasts on grill pan once smoke starts to appear while pan is heating.
Sear chicken breasts on one side for 4-5 minutes.
Flip and finish in the oven on 375 for 5-7 minutes or until chicken is thoroughly cooked through to the middle.
Remove from oven and let rest for 5 minutes.
Slice chicken breasts against the grain into long pieces.
Fresh Pineapple Salsa
Roughly chop pineapple into bite sized chunks and place in a medium sized bowl.
Finely diced red onion and place in bowl with pineapple.
Roughly chop cilantro and add to bowl with pineapple and red onion.
Finely dice jalapeno, deseed (if no heat is desired) and place in bowl with pineapple, red onion and chopped cilantro.
Season with salt and pepper, stir and adjust seasonings to your taste.
Set aside until assembly.
Additional Instructions
Prepare rice according to package instructions. While rice cooks/simmers, prepare jerk chicken and pineapple salsa.
Jerk Chicken Bowl with Pineapple Salsa Assembly
In a bowl, place ¼ cup to ½ cup of rice.
Add 5-6 slices of chicken breasts on top of the rice
Top with ¼ cup to ½ cup of pineapple salsa.
Garnish with any leftover herbs and enjoy!
