First, sift the flour, sugar, cornstarch and baking powder and set aside.
Then combine the sugar and butter in a large bowl and mix until combined.
Next, add vanilla, honey and egg and mix until smooth.
Now, slowly add dry ingredients and mix until the dough forms into a soft ball.
Refrigerate for at least thirty minutes up twenty four hours. This step should not be omitted, it helps the dough to form, the cookies bake evenly and won't expand as much.
On a lined baking sheet, using a small cookie scoop or tablespoon, roll out small balls and place on baking sheet about 2-3 inches a part.
Be sure to allow enough expanding room for the cookies and being being careful not to place too close together.
Once the dough balls have been placed, bake cookies at 350 degrees for 11-13 minutes. Be careful to monitor the cookies during the baking process as results will vary based on your oven.
Allow the cookies to cool and slightly harden and drizzle additional honey and sprinkle with honey truffle sea salt.
