Cajun Salmon with Avocado Citrus Salsa

Doesn’t that just sound delectable? It tastes just as good and you won’t feel guilty devouring this! It gets no easier than this; 20 minutes max from start to finish and hopefully you won’t devour the citrus avocado salsa like I did before the salmon was done!

Ingredients
  

  • 1.5 lbs Salmon
  • 1 tsp Cooking Oil
  • 1.5 tsp Blackened seasoning Cajun Seasoning
  • 2-3 Avocados Depending on size
  • 2 tb Lime Juice Plus one sliced wedge
  • 1 tsp Fresh Orange Juice
  • ¼ cup Red Onion
  • ¼ cup Cilantro
  • .5 teaspoon Season All
  • Salt + Pepper To Taste

Instructions
 

  • Sear salmon skin side down on high heat for 5-7 minutes. The perimeter will be just about cooked through.
  • Squeeze one lime wedge over salmon and let lime juice cook down. (until smoke evaporates)
  • Finish in the oven on 375 degrees for 5-7 minutes until desired temperature.
  • While salmon is baking, prepare avocado salsa by cubing avocado in a medium sized bowl.
  • Small dice red onion and cilantro and add to bowl.
  • Add lime juice, fresh orange juice, season all and salt and pepper to taste and stir. Adjust seasonings to your liking.
  • Plate dish by adding salmon skin side down and topping with avocado citrus salsa mixture and enjoy!
