Jerk Shrimp Sliders with Pineapple Salsa

Ingredients
  

Jerk Shrimp Sliders

  • 10 oz Shrimp small to medium sized
  • 1 tablespoon Jerk Marinade see blog notes
  • 1 cup Bibb Lettuce
  • 2 tablespoon Butter unsalted
  • 6-8 Hawaiian Slider Buns see blog notes

Pineapple Salsa

  • 2 cups Pineapple small diced
  • ½ cup Cilantro roughly chopped
  • ¾ cup Red Bell Pepper small diced
  • ½ cup Red Onion small diced
  • ¼ cup Jalapeno
  • 1 tablespoon Honey
  • Pinch Salt
  • ¼ teaspoon Pepper

Herb-Garlic Aioli

  • ½ cup Mayonnaise
  • ½ tablespoon Garlic garlic paste
  • ½ tablespoon Thyme
  • ½ tablespoon Tarragon
  • 1 tablespoon Lemon Juice
  • Pinch Salt
  • ¼ teaspoon Pepper

Instructions
 

Pineapple Salsa

  • Begin by roughly chopping and small dicing the pineapple, red bell pepper, red onion, cilantro and jalapeno.
  • Next, measure the lime juice, honey, salt and pepper.
  • In a medium to large bowl, add the diced pineapple, red bell pepper, red onion, cilantro and jalapeno.
  • Now, pour in the lime juice, honey, salt and pepper.
  • Lastly, stir ingredients until thoroughly combined. Cover and set aside until later use.

Herb-Garlic Aioli

  • Begin by measuring and prepping the mayonnaise, garlic, thyme, tarragon and lemon juice.
  • Next, add the mayonnaise and additional ingredients to a small bowl.
  • Whisk until thouroughly combined.
  • Now, taste test the aioli and adjust flavor to your liking by adding salt, pepper or more lemon juice.
  • Last, cover and set aside until later use.

Jerk Shrimp

  • Prep shrimp by peeling, deveining, thawing, rinsing and drying with a paper towel. a small to medium sized skillet on medium/high heat.
  • Add butter to the pan and melt.
  • Pour in shrimp and begin sautéing in butter.
  • At the same time, add jerk marinade and stir.
  • Cook jerk shrimp in butter and jerk sauce being careful not to overcook.
  • Finally, remove cooked jerk shrimp from heat and set aside.

Assemble Jerk Shrimp Sliders

  • First, toast the sliders. After toasting the slider buns place on desired serving tray.
  • Now, add about one teaspoon of the herb garlic aioli to the bottom slider bun.
  • Then, layer the lettuce over the bun and aioli.
  • Next, add on the prepared jerk shrimp (about 3-4 shrimp depending on size).
  • Then, top with about one tablespoon of pineapple salsa.
  • Finally, top the bottom half of the prepared slider with the top bun and serve!
