Ingredients
  

Homemade Caesar Dressing

  • ¼ cup Mayo
  • 1 tablespoon Dijon Mustard
  • 1 tsp Worcestershire Sauce
  • 1 teaspoon Anchovy Paste
  • ½ tsp Lemon Juice
  • Pinch of Sugar
  • Pinch of Pepper
  • 2 tablespoon Parmesan Cheese

Homemade Garlic Croutons

  • ½ loaf Crusty Bread
  • 1 tablespoon Olive Oil
  • 1 tablespoon Fresh Parsley chopped
  • 1 tablespoon Garlic Paste or fresh minced
  • Salt + Pepper to taste

Lemon Grilled Chicken Breasts

  • 1 lb Boneless Skinless Chicken Breasts pounded thin if thick
  • ½ Lemon small
  • 1 tsp Salt used smoked salt
  • ½ tsp Season All
  • 1 tsp Cooking Oil

Additional Ingredients

  • 9.5 oz Romaine Lettuce
  • ¼ cup Shaved Parmesan

Instructions
 

Homemade Caesar Dressing

  • In a small/medium sized bowl, combine all dressing ingredients except sugar and pepper.
  • Whisk until thoroughly combined and add sugar and pepper to taste.
  • Cover and refrigerate until use.

Homemade Garlic Croutons

  • Preheat oven to 425 degrees.
  • Slice bread into bite sized pieces and place in a medium sized bowl.
  • Add garlic, oil, parsley, salt and pepper and stir until well combined.
  • Place croutons on a lined baking sheet and bake 3-5 minutes until desired consistency.

Lemon Grilled Chicken Breasts

  • Preheat oven to 375 degrees.
  • On lined paper to protect cooking surface, pound chicken breasts to one inch thick (if thick)and season with salt and season all.
  • In a grilling (or sautéing) pan, place 1 teaspoon of cooking oil and sear chicken breasts on one side for 3-5 minutes. Flip and squeeze lemon juice over chicken and place in the oven for 15 minutes or until chicken is cooked through.
  • Once chicken breasts are done, set aside to let rest.

Grilled Chicken Caesar Salad Assembly

  • In a large mixing bowl place romaine lettuce, sliced parmesan, croutons, 2-3 tablespoon of dressing and 1 teaspoon of black pepper and mix using tongs or your hands.
  • Add more dressing if desired and plate salads based on 4 servings or 2.
  • Place sliced chicken breasts on top of salad and enjoy!
