Frozen Berry Parfait Pops

Ingredients
  

  • 2 cups Greek Yogurt vanilla
  • ¼-1/2 cup Almond Milk
  • 1 cup Strawberries
  • 1 cup Blueberries
  • ½-1 cup Water if doing multiple flavors
  • 2 tablespoon Honey 1 tablespoon per fruit filling
  • 1 Lemon
  • ½ cup Granola optional

Instructions
 

  • Roughly chop strawberries. (Blueberries can remain whole)
  • In a small sauce pot, add fruit to pot and ¼ cup of water. Add more water as needed if water evaporates quickly.
  • As fruit warms up, juices will release and fruit will begin to break down. When this happens, begin mashing fruit with a fork or masher.
  • Once mixture begins to boil, add 1 tablespoon of honey and up to 2 tablespoon of lemon juice to each pot of fruit. Adjust fruit flavor to your liking, I prefer a lot of tart.
  • Allow fruit mixtures to completely cool. I place mine in the fridge to speed the process up.
  • While fruit compote cools, prepare yogurt mixture by adding yogurt and milk and whisking until mixture becomes runny and smooth.
  • If you are using plain greek yogurt, add about 1tbsp of honey and ¼ teaspoon of vanilla extract.

Yogurt Parfait Assembly

  • Using your popsicle molds. Begin by adding 1tsp-1 tablespoon of yogurt to the first layer. The amount will depend on the shape and size of your mold. You should have about 1-2 inches worth of yogurt.
  • Next, add 1 teaspoon of berry filling and follow with 1 tsp-1 tablespoon of yogurt.
  • Add 1 teaspoon of granola and top with 1 tsp-1 tablespoon of yogurt.
  • Repeat these steps until mold is full ending with the last layer of yogurt.
  • Gently place popsicle sticks in the middle of the molds and place in freezer for 4 hours up to 24 hours for maximum hold!
