WHAT IS THE FLYING DUTCHMAN?
The Flying Dutchman hails from the popular food chain, In-N-Out Burger. If you have not been lucky enough to try this burger joint out, add a visit to your must-try list. Until then, you have to try this copycat recipe!
The Flying Dutchman consists of two beef patties, two cheese slices, without buns or condiments. As you have probably seen on TikTok or social media, the new craze is getting this style burger "onion wrapped".
With that said, the Flying Dutchman is prepared as listed but then wrapped in sliced, grilled caramelized onions. Viewers are then tantalized with food reviewers slather the popular In-N-Out spread on top and drizzling their famous spicy yellow pepper juice right on top.
Yes, it does taste as good as it sounds!
WHAT INGREDIENTS DO I NEED?
FOR THE FLYING DUTCHMAN
For the Flying Dutchman, you will only need a few ingredients. Here is what you will need:
- Ground Beef. Good quality beef is best for this recipe, it will yield in overall top flavor and texture. I used grass-fed beef with an 80/20 fat ratio.
- Sliced Cheddar Cheese. In-N-Out uses pre-sliced American Cheese. However in this recipe, I used pre-sliced Cheddar Cheese. You can certainly use what you have on hand or what you prefer.
- Onion. For this recipe, if you want to stay true to the original, use white onions. I used yellow onions for a slightly sweeter taste. Either way, you can't go wrong!
- Salt and Pepper. Since we are using fresh ingredients, don't be alarmed the only seasonings used in this entire recipe is salt and pepper.
- Butter. Unsalted works best to control the amount of salt in the overall recipe. We will use a little butter to caramelize the onions and produce an amazingly delicious crust on the edges of the burger patties, yum!
- Spicy Yellow Peppers. In-N-Out is known for their delicious spicy yellow peppers. These peppers are served with any meal ordered and adds a nice, tangy and spicy finish. These peppers pair so well with the burgers. Tap here to see the peppers I was able to grab for this recipe.
THE FAMOUS IN-N-OUT SPREAD SAUCE
There are many burger sauces around, having tried the popular spread from In-N-Out, I have to say, theirs is one of the best! I've used a version of their burger spread for years, mostly on my delicious Bacon Cheeseburger Salad recipe.
Here is what you'll need:
- Mayonnaise. Good quality always produces the best outcome. My favorite mayo brand is Blue Plate, tried and true since birth. It could be that I am southern, Southerners love Blue Plate Mayonnaise!
- Ketchup. Most burger sauces start with a base of mayo and ketchup, no surprise here.
- Yellow Mustard. While this ingredient can be a bit overpowering, we are using a small amount that'll add the slight 'zing' to this burger sauce.
- Sweet Relish. No surprise here, the sauce needs a hint of sweetness and the relish is absolutely perfect. No guessing here that In-N-Out uses relish in their spread, you can see it!
- Dill Pickle Juice. This is my little secret addition to the sauce, trust me and then thank me later. 🙂
- Sriracha. Totally optional, but if you like a hint of smoky and spicy, try it out and let me know what you think.
- Worcestershire Sauce. Savory and Unami flavors brings this sauce to a delicious end, don't leave this baby out!
HOW TO MAKE IN-N-OUT FLYING DUTCHMAN
Provided that the ingredients are prepped before beginning this recipe, this onion wrapped burger can be made in under fifteen minutes. First, begin by preparing the burger patties.
PREPARE THE IN-N-OUT SPREAD
The spread is simple to prepare and should be done first. It will need time to marinate and while the onion burgers are being prepared will be ample time!
You will need a small to medium sized bowl and a whisk. Add the mayonnaise, ketchup, sriracha (optional), Worcestershire Sauce, dill pickle juice, sweet relish, mustard and whisk thoroughly.
Taste for seasoning and add salt and pepper if desired. Set aside until later use.
HOW TO CARAMELIZE THE ONION RINGS
First, decide which cooking pan/griddle you will use. It is important to note that a durable pan will work best such as a cast iron skillet, that is what was used in this recipe.
Then, you will need to slice the onions into two to three inch round slices. One large onion should yield about four to five round slices of onions. Do not separate the onion slices, this will act as the bun for the Flying Dutchman burger patties.
In the cast iron skillet on medium to high heat, place one tablespoon of butter in the pan. Once the butter begins to bubble, place each onion ring into the pan and season both sides with salt and pepper.
The caramelizing process will happen fairly quickly (about 3-5 minutes). Be sure to only flip the onion rings once, ensuring each side is seasoned with salt and pepper. You will know when the onions are cooked through because the color will become golden brown and the onions will begin to soften and wilt.
Set the caramelized onions aside until later use. Be sure to not clean the pan, there's flavor there that will be used when preparing the burger patties.
FLYING DUTCHMAN BURGER PATTIES
As mentioned, there are minimal ingredients needed to prepare these juicy delicious burger patties. Be sure to grab high quality ground beef (grass fed beef with good fat content).
First, in a large bowl, add the ground beef. Then, portion out each burger patty into 4 ounce round balls. The key to the perfect smash style burger patties are thin style burger patties that are minimally seasoned.
In order to achieve the smash style burgers, I placed the burger on two pieces of parchment paper (top and bottom) and used a rolling pin to "smash" the burgers. This was the best option in my opinion because smashing them on the griddle releases a lot of that amazing flavor you want to maintain during the cooking phase.
After repeating this step to create four burger patties, in the same large skillet used to caramelize the onion rings, on medium/high heat (I used my grandmother's cast iron skillet), add one teaspoon of butter to the pan. When the butter begins to bubble place each smashed patty onto the griddle and season each side liberally with crushed/coarse salt and cracked black pepper.
It is important to note, the burger patties do not need to be tampered with while cooking. Only flip the patties once. Once the burger patty is flipped, wait at least one minute before placing the sliced cheese on each patty. This cooking process should take 2-3 minutes per side depending on your desired temperature.
ASSEMBLING THE ONION WRAPPED FLYING DUTCHMAN BURGERS
This step is very crucial and it's important to note, this burger is quite messy so have paper towels on hand! After the burger patties have been removed from the cast iron skillet, place the caramelized onion rings back into the same pan the burger patties were prepared in on medium heat (this step only takes a few minutes). Please note, you may need to remove some access grease from the pan, simply use a paper towel!
After the onion rounds have been placed into the pan, add a burger patty with cheese on top of each onion round. Allow a few minutes for the ingredients to mesh together and remove from the pan.
Simply stack each patty on top of each other making sure the onion rounds are on the outside of each patty, acting as a "bun" or cover. Be careful, the patties will be hot!
HOW TO EAT ONION WRAPPED FLYING DUTCHMAN
After the cheesy burger patties have been stacked and the grilled, caramelized onion rounds have been added, it is time to devour this messy but oh, so delicious onion wrapped burger.
I am sharing extra verbiage on how to eat this delicious burger because it needs all its glory. To eat the burger as seen on social media, slather the In-N-Out spread sauce over the onion burgers, take a spicy yellow pepper and bite the tip off to release the juices. Pour this juice over the burger and immediately bite into the burger.
Trust me, repeat these steps and you will want another onion burger immediately. You will absolutely enjoy this though!
RECIPE VARIATIONS AND SUBSTIUTIONS
- Ground Meat. Use your favorite ground meat. If you have dietary restrictions, ground turkey or chicken will work. Just be sure to adjust cooking times based on the type of ground meat.
- Toppings. It's ok if you want to venture off a bit from traditional. You can certainly add sliced tomatoes, pickles and lettuce!
- Double the patties. Add more burger patties to make this a triple burger sandwich.

The flying dutchman is meant to have the cheese in the middle. If you look it up you'll see it's mostly made that way. So just flip one pattie ontop of the other. Try it this way and you'll see how much better it is. Other than that great recipe.
