    Buttermilk Fried Chicken and Egg Waffle Sandwich

    Brunch just got more exciting with this buttermilk fried chicken and egg waffle breakfast sandwich! Want to impress guests but not spend hours in the kitchen to do so? This unique sandwich is the perfect dish to make!

    I'm dedicating this recipe to my Mom! She recently gifted me a waffle maker. I was dreading making space for another "thing" in our tiny apartment but 'm so glad she did! This recipe is low maintenance and only looks fancy so don't be alarmed, I'm always here to save you time and effort!

    Breakfast can get pretty redundant so I'm always thinking of new pairings to keep things exciting. I'm still tweaking my homemade waffle/pancake recipe so for now, I used store bought mix and you should too! No judgement here.

    The most intricate part of this recipe is the southern style fried chicken breasts. Here are a few pointers to ensure maximum flavor and juicy chicken.

    Tips for The Perfect Fried Chicken Breasts

    • Always brine chicken in buttermilk for at least a half hour. This allows the meat to be tenderized.
    • Don't have buttermilk? Make a batch with one cup of milk and one tablespoon of vinegar. Double this ratio if you have more chicken.
    • Season the flour in addition to the chicken before frying.
    • Use the right oil when frying chicken. For this recipe, I used lard. If you don't have lard, use peanut or canola oil.
    • Prep ingredients to maximize cooking time.

    You can pair this sandwich with sausage, bacon or any of your favorite breakfast meats! I've tested it with pork sausage patty's and it's delicious!

    We topped ours with hot sauce and a hot-honey syrup and it was the right amount of sweet heat! Here's the recipe below.

    Equipment

    • Waffle Maker

    Ingredients
      

    Waffles

    • 1 cup Waffle Mix
    • 1 tablespoon Oil
    • 1 tablespoon Butter
    • 1 Egg

    Buttermilk Chicken Brine

    • 1 cup Buttermilk
    • 1 tablespoon Hot Sauce optional
    • 1 tablespoon Smoked Salt optional
    • 1 tablespoon Pickle Juice

    Southern Fried Chicken Breasts

    • 1 lb Boneless Skinless Chicken Breasts
    • 2 cups Flour
    • 1-2 cups Cooking Oil
    • 2 teaspoon Lemon Pepper Seasoning
    • 2 teaspoon Cajun Seasoning
    • 2 tsp Pepper
    • 2 teaspoon Garlic
    • 2 teaspoon Onion Powder

    Additional Ingredients

    • ⅓ cup Arugula optional
    • 2 Eggs over medium (optional)
    • Syrup optional

    Instructions
     

    Buttermilk Chicken Brine

    • In a shallow dish, combine buttermilk, pickle juice, smoked salt and hot sauce and stir.
    • Submerge Chicken Breasts in liquid mixture and let bring for a half hour up to one hour.

    Waffles

    • Prepare waffles according to package instructions and keep in a warm place until ready to serve.

    Southern Fried Chicken Breasts

    • In a deep, large dish. Add flour and 1 teaspoon each of listed seasonings to flour.
    • Stir flour until seasonings are well combined.
    • Remove chicken from brine and place on a clean surface. Season chicken breasts with remaining seasonings. Set aside.
    • In a large frying pan, fill with oil and turn heat on high.
    • While oil is heating, coat chicken breasts with seasoned flour.
    • Once oil begins to slightly smoke, fry chicken pieces in oil until thoroughly cooked through.
    • Drain cooked chicken breasts until ready to assemble.

    Additional Toppings

    • In a small pan, fry eggs until desired temperature. Sprinkle with salt and pepper and set aside until assembly.

    Waffle Sandwich Assembly

    • Cut waffle into fours. This will make two sandwiches.
    • Place one "triangle" waffle on a plate and stack with arugula, chicken breasts and egg.
    • Drizzle with syrup or honey and enjoy!
