    Honey-Soy Chicken with Pineapple Salsa

While preparing for snow in Seattle this weekend, I immediately channeled my inner island vibes, this girl knows nothing about snow! I wanted to create a dinner that would instantly bring sunny vibes since we were a long way from someone's warm and sunny beach. This dish gives you all of that and more.

This quick, asian-tropical infused dish needs to be added to your dinner rotation. Let's kick spaghetti to the curb every now and again, I know that's everyone's go-to! Don't get me wrong, I love a good spaghetti but you and I both know at times, we are hankering for something different and even healthy. This honey-soy marinated chicken with fresh pineapple salsa is just that!

In a mixing bowl, combine garlic, soy sauce, lime juice, honey, and sesame oil; whisk together until thoroughly combined. Pour mixture over chicken breasts, massage and let marinate at least one hour.

To prepare salsa, dice pineapple, red onion and cilantro and place in a mixing bowl. Add honey, lime juice and stir. Salt + pepper to taste and set aside.

Preheat skillet to medium/high heat and add ½ teaspoon of oil to lightly coat pan. Sauté chicken breasts until cooked through using leftover marinade to baste chicken. Plate chicken breasts and top with pineapple salsa. Enjoy!
