In a mixing bowl, combine garlic, soy sauce, lime juice, honey, and sesame oil; whisk together until thoroughly combined. Pour mixture over chicken breasts, massage and let marinate at least one hour.
To prepare salsa, dice pineapple, red onion and cilantro and place in a mixing bowl. Add honey, lime juice and stir. Salt + pepper to taste and set aside.
Preheat skillet to medium/high heat and add ½ teaspoon of oil to lightly coat pan. Sauté chicken breasts until cooked through using leftover marinade to baste chicken. Plate chicken breasts and top with pineapple salsa. Enjoy!
Honey Soy Chicken with Pineapple Salsa
Ingredients
Honey Soy Marinade
- ¼ cup Soy Sauce
- 1 tb Garlic
- ½ Fresh Lime Juice
- 1.5 tablespoon Honey
- ½ teaspoon Sesame Oil optional
- ¼ teaspoon Red Pepper Flakes optional
Pineapple Salsa
- 10 oz Pineapple
- ½ cup Red Onion
- ¼ cup Cilantro
- 1 tablespoon Honey
- ½ Fresh Lime Juice .
- Salt + Pepper to Taste
Additional Ingredient
- 1lb Boneless Skinless Chicken Breast
Instructions
Honey Soy Chicken
- In a mixing bowl, combine garlic, soy sauce, lime juice, honey, and sesame oil; whisk together until thoroughly combined.
- Pour mixture over chicken breasts, massage and let marinate at least one hour covered.
- Preheat skillet to medium/high heat and add ½ teaspoon of oil to lightly coat pan.
