Prepare the sugar cookie crust!
Begin by preheating the oven to 350°F. Add butter, white sugar, and brown sugar to a large mixing bowl. Cream the mixture with a hand mixer until thoroughly combined.
Then pour in the egg, egg yolk, vanilla and almond extract, and lemon juice and mix for an additional 30 seconds or until the ingredients are thoroughly combined. Add the dry ingredients and mix until thoroughly combined. Use a spatula to scrape the sides of the bowl to ensure the ingredients are mixed well.
Line a round baking sheet pan with parchment paper and place dough in the center of the pan. Using a spatula or your hands, spread dough evenly onto the baking sheet to fit the circumference of the pan. The dough will become sticky, use 1 teaspoon of flour or 1 teaspoon of water to assist.
