This spicy sausage, kale, and sweet potato soup is probably the best soup I've made! Although this isn't a copycat recipe, I did take some inspiration from Olive Garden's Zuppa Toscana Soup. But I added healthier ingredients and made this Italian-inspired soup even more flavorful!

Reasons Why We Love Sausage and Potato Soup
- Healthy. This soup is indulgent but also super nourishing. It's packed with leafy greens and sweet potatoes so it's rich in nutrients.
- Quick and Easy. Sausage and potato soup is great for beginners. With just a few ingredients and a half hour's time, you'll have a hearty soup on your dinner table.
- Great Comfort Food. This rich and hearty soup will stick to your bones during the winter.

Ingredients
This soup was created with items I had on hand. I'm certain you too can create this tasty recipe and not have to visit the store.
- Spicy Italian Sausage. The flavor base of this soup. For one thing, Jimmy Dean's Spicy Pork Sausage is my favorite sausage to cook with. I use it in chili, spaghetti, and breakfast dishes. This breakfast-style sausage is extremely universal!
- Chopped Kale. This provides the balance the soup needs. In fact, kale is one of the most nutrient-dense foods around. Because of the flavor profile of the soup, like the mushrooms, the kale is able to pick up the existing flavors. In this case, add as much kale as you like, it cooks down and is a great way to make this dish even healthier. Use it roughly chopped.
- Sweet Potatoes. Lastly, the sweet potatoes provide the heartiness the soup needs. With this in mind, using sweet potatoes is a healthier option, they are a great root vegetable to use and high in fiber. Although its flavor is different from white potatoes, the sweetness that it provides, pairs well with the heat from the sausage. Peeled and small diced.
- Mushrooms. The wild mushrooms in fact provide the next layer of flavor. If you're not a mushroom lover, I highly recommend giving it a try. To explain, the mushrooms provide a chewy texture and give the soup its earthy flavor.
- Garlic Paste.
- Favorite Season All.
- Vegetable Bouillon. To enhance the flavor of the broth.
- Water. The liquid base of the soup/
- Fresh Herbs. I used tarragon and fresh thyme.
- Red Pepper Flakes. Optional.
- Asiago Cheese. This is an optional ingredient but if you love a creamy, cheesy soup, then this is a no-brainer.
- Salt + Pepper. To taste.

How to Make Sausage and Potato Soup
This soup comes together in under thirty minutes. There's little prep and the only item that needs attention are the sweet potatoes. Here's how easily it comes together!
Brown Sausage and Add Veggies
First, in a large stock pot, sauté spicy sausage until browned. Next, add diced sweet potatoes, mushrooms, and garlic. Cook until it becomes fragrant and the ingredients begin to cook down. This step takes about fifteen minutes.



Remove Excess Fat
Second, you will drain the sausage, mushroom, and sweet potato mixture of any excess fat. With this in mind, pour the mixture into a strainer as you would draining noodles for a pasta dish! Finally, return the mixture back to the pot and you're more than halfway complete with this easy one-pot dish.
Add Kale
At this instant, add chopped kale and sauté until kale begins to wilt and cook down. Add in the dry seasonings and fresh herbs.


Simmer
With just about fifteen minutes of cook time, now the soup will simmer for an additional 15-30 minutes. Begin by adding in the vegetable bouillon and water. Stir one last time and allow to simmer being cautious to not overcook the potatoes.
Finally, top with a small amount of asiago cheese and enjoy!

Variations and Substitutions
- Meatless. If you'd like to omit the meat, I strongly suggest replacing it with a heavily flavored meatless product. The base of this soup to repeat, begins with the meat. To explain further, you'll need a base ingredient that releases a little fat content and flavor to create a tasty broth! Try this meatless sausage here or this brand that I've heard good ratings about!
- Swap the Protein. Instead of spicy sausage, you could use ground beef, turkey, or chicken. You could also use leftover meat you have on hand. I would suggest smoked sausage, diced ham, bacon crumbles, shredded chicken, or turkey.
- Leave out the mushrooms. Don't like mushrooms? Skip them! This soup will still hold tons of flavor. However, I strongly suggest giving it a try because it creates strong earthy tones in the soup that are extremely flavorful!
- Beans. Add white beans like cannellini beans for added fiber and a thicker soup.

Can This Healthy Sausage and Potato Soup Be Prepared in a Slow Cooker?
Absolutely! To clarify, this soup can be cooked in a slow cooker or instant pot. Here are a few tips when choosing to use one of these cooking methods.
- If using a slow cooker, follow the first two steps in the written recipe below by sauteing the sausage, sweet potatoes and garlic and drain any fat. Then place the remaining items including mushrooms, herbs, seasonings and water and cook on low for 2-4 hours until potatoes are fork tender.
- If you have an instant pot on hand, set your setting first to the saute function and follow the first 3 steps of the written recipe below. Next select manual and cook on high for 8-10 minutes and quick release. Allow mixture to continue to cook with lid open until kale and sweet potatoes are at desired tenderness.
Tips and Tricks
- Chopping the sweet potatoes into smaller, bite sized pieces will aid in cooking the potatoes faster. But be careful not to overcook or they will become mushy. It normally takes about 10 minutes to sauté to get them ready for the short boil when all ingredients are thrown in at the last step.
- Cook the sausage on medium heat so that they don't dry out or burn. You want the sausage to be juicy and flavorful.
- Is your soup too thin? Remove some potatoes, mash them, then add them back to the soup. This will thicken the soup.

Can I make Sausage and Potato Soup in advance?
Yes. Prepare the soup up to 2 days in advance.
What to Serve with Sausage and Potato Soup
Serve this soup with crusty bread, grilled cheese, or as is.
How to Store Leftovers
Store leftover soup in an airtight container in the fridge for up to 2 days. It will last in the freezer for up to 3 months.
To reheat, warm up on the stove over medium-low heat.

- 8 oz Mushrooms
- 1 tsp Garlic Paste

- 1.5 tablespoon Vegetable Bouillon
- 6 cups Water
- 1 teaspoon Fresh Tarragon
- 1 teaspoon Fresh Thyme
- 2 teaspoon Red Pepper Flakes optional
- ¼ cup Asiago Cheese optional
- Salt + Pepper to Taste
Instructions
- In a large stock pot, sauté sausage until browned adding in sweet potatoes, mushrooms and garlic until cooked through.
- Drain sausage, mushroom and potato mix of any access fat if applicable.
- Pour in chopped kale and sauté until kale begins to wilt.
- Add seasonings, fresh herbs and stir.
- Add in vegetable bouillon and water.
- Stir thoroughly and let simmer until potatoes are fork tender (this takes 10-15 minutes). Be careful not to overcook the potatoes.
- Serve warm topped with asiago cheese and crusty bread if desired.
